In 2024, Taste of the Republic introduced the Tequila Cantina.

It was such a hit with attendees that we expanded its offerings. We are now proud to offer our guests the Texas Cantina! Each attendee who enters the cantina will receive flights of tequila, mezcal, and sotol with information about each drink’s different tastes and flavor profiles. This drinking tour through the Southwest is sure to delight your palette!

Texas Cantina Spirits

Tequila Corrido

Each sip is a symphony that awakens your senses and leaves you wanting more. This isn’t just a drink—it’s a declaration of defiance in a world that tries to water us down.

Blanco

This tequila captures the raw spirit of the Blue Weber agave from the highlands of Jalisco. The vibrant sweetness of the agave harmonizes with subtle notes of pepper and earthy undertones, creating a refreshing and complex profile.

Aroma

The nose is greeted with the bright, invigorating scent of raw agave, intertwined with delicate floral notes and a zesty hint of lime.

Flavor

On the palate, fresh agave, complemented by notes of crisp citrus, sweet tropical fruits and a subtle earthy touch.

Finish

The finish is smooth and refreshing, with a lingering warmth that carries the essence of sweet agave and a touch of herbal complexity.

Reposado

Notes of toasted oak and dried fruit intertwine with the smooth caramel and vanilla, while a subtle spice lingers on the palate.

Aroma

A symphony of captivating aromas, including maple, nuts, vanilla, caramel, and coconut. Warm notes that are perfectly balanced.

Flavor

Añejo

Our Añejo is a masterclass in patience and precision.The rich amber hue hints at the complexity within, as layers of dark chocolate and roasted coffee emerge alongside the fruity and herbal notes.

Aroma

Black cherry and a punch of spice, followed by subtle herbal notes. Just when you think you’ve got it, hints of vanilla, peach, almond, and maple creep in, with a touch of caramel to seal the deal.

Flavor

Silky smooth, expect bold coffee, rich agave, and dry fruits that take your taste buds on ride you’ll always remember.

Finish

The finish of our Añejo is smooth and lingering, with the rich flavors coffee lingering on the palate. Subtle notes of vanilla and spice add complexity to the finish.

400 Conejos Mezcal and Espadín

Mezcal may sound different from tequila, but they’re actually from the same plant. In fact, tequila is a type of Mezcal. Mezcal is a fermented drink that can be made from any type of agave plant. Thus, unlike Tequila, it can come from anywhere Agave grows including West Texas and Northern Mexico.

Mezcal includes a smokey finish due to the preparation process. It is smoked underground instead of baked in an oven.

Desert Door Sotol

Sotol is often called Texas’ answer to tequila. This spirit comes from the Sotol plant which is somewhat similar to the agave plant but comes from a different family, genus and species and has a different appearance and flavor profile. This plant grows plentifully in the Chihuahua desert of Northwest Mexico and West Texas. Desert Door’s Sotol is harvested on the Texas side of the border and is known as Texas Sotol.

Los Amantes Mezcal Reposado

Los Amantes Mezcal Reposado is an artisanal expression that combines the authenticity of traditional mezcal with the smoothness imparted by aging in oak barrels.

Made from 100% Espadín agave cooked in stone ovens and distilled in copper pot stills, this mezcal embodies the essence of the Oaxacan terroir and the mastery of ancestral distillation. Its time in oak barrels lends balance, roundness, and an elegant character without losing the smoky and vegetal soul characteristic of mezcal.

On the palate it is silky and balanced, with flavors of sweet agave, spices, nuts and a subtle toasted touch.

Volada Vodka

“De Volada” means fast in Spanish and that’s how life flies by!
So, we raise our glasses, pa’rriba, to celebrate with our crew.

Watermelon

Also known as Agua de Sandía, this Volada is sweet and summery. A harmony of juicy watermelon and smooth vodka, made with real fruit and sweetened with agave honey.

Mango Chamoi

We think this most fun Volada, but don’t tell the others. A fusion of the sweetness of ripe juicy mango, with a surprising kick; perfect for creative cocktails and playful afternoons.
